Rhubarb-Marinated Tofu Steaks

Ingredients - For the Tofu: 1 pounds firm tofu


For the Marinade:

  • 1 tablespoon olive oil1 small onion, chopped

  • 2 garlic cloves, minced3 large rhubarb stalks, chopped

  • 1/4 cup ketchup

  • 2 tablespoons water

  • 1 tablespoon maple syrup

  • 2 teaspoons whole-grain mustard1 tablespoon soy sauce

  • 1 teaspoon cumin

Preparation

  1. Cut your tofu into 8 chunky slices, about 5/8 inch thick. Set aside.

  2. Warm the olive oil in a skillet, add the onion, and saute over medium heat for 3 minutes, until softened. Add the garlic and saute for 1 minute.

  3. Add the rhubarb along with the rest of the marinade ingredients. Bring the mixture to a boil, then simmer for 15 minutes. After the rhubarb has softened, let the mixture cool slightly, then blend to the consistency of a sauce and cool.

  4. Coat the tofu steaks with the sauce and marinate for at least 30 minutes. The longer the marinating time, the more flavor soaks into the steaks.

  5. Gently warm the steaks in the marinade until heated through.

  6. Alternatively, heat a heavy skillet or a cast-iron griddle pan and grill the steaks for a minute or two on each side, gently warm the remaining sauce, and pour it over the steaks.

This year’s 77th Annual Golden Globes Awards served a 100% plant-based meal prior to the award show.

The original menu included fish in the main course, but two weeks ago, the Hollywood Foreign Press Association (HFPA) made the change to plant-based, saying they hope the shift will raise awareness about the impact a non-sustainable, meat-heavy diet has on the environment.


The organization and kitchen expressed excitement about the new and innovative alterations to the menu and the lifestyle changes the vegan celebration will hopefully inspire.

“If there’s a way we can, not change the world, but save the planet, maybe we can get the Golden Globes to send a signal and draw attention to the issue about climate change,” said president of the HFPA Lorenzo Soria. “The food we eat, the way we grow the food we eat, the way we dispose of the food is one of the large contributors to the climate crisis.”


“The climate crisis is impossible to ignore,” Soria continued, “and after speaking with our peers, and friends in the community, we felt challenged to do better.”


“It was a little shocking when first mentioned, because of being very close to the actual Globes and having already decided on a menu,” said Beverly Hilton’s executive chef Matthew Morgan, “But once we thought about it and the message that it sent, we were really excited about it. That’s something I stand behind myself.”


Activists and actors alike are applauding the new menu. It included king oyster mushroom scallops on a bed of wild mushroom risotto served with roasted brussel sprouts and a chilled golden beet soup. Icelandic Glacial provided sustainably-sourced natural spring water offered in a glass bottle to reduce plastic waste.
